Almocreva Cured Serpa DOP

Named for the town in the Baixo-Alentejo, Serpa is an amanteigado style cheese made according to traditional methods. Our producer Nuno was a sheep farmer for a long time before expanding and buying his cheese plant. His single herd of sheep supply the raw milk for the cheese. Like other cheeses from the area, it is made with thistle rennet, giving it a characteristic taste and aroma. The flavor is strong and complex, with sheepy, sour, and buttery notes. 

Semi-hard texture.
