Coley, also known as saithe or coalfish, is an inexpensive and underutilised member of the cod family. 

Its mild flavour and medium-firm texture make it a great, sustainable alternative to cod and haddock, which have both previously fallen victim to overfishing.

Don’t be put off by its slightly dull-looking flesh when raw. Once cooked it will be just as pearly white as its cousins’.
