The pasta is pressed using the traditional bronze process. This means that the pasta dough is pressed through special bronze plates. This gives the Cavatappi a roughened surface and a denser structure than conventional pasta. Thus, the sauce sticks particularly well to the noodles and they get the desired firm consistency when cooked.

Preparation tip: The tubular, short pasta is best eaten with pesto, tomato sauce or cheese sauces. They also go wonderfully in casseroles and pasta salads.
