Grey Mullet

Grey mullet is a common fish found all over the world.

But there’s nothing common about its uniquely earthy, almost nutty flavour, or the traditional use of its highly prized roe for that matter.

When salted, pressed and dried, the roe sac of the grey mullet is known as bottarga, a delicacy the world over that dates back to ancient times.
But perhaps a more well-known use of its roe is as a key ingredient of the classic Greek mezze dish taramasalata.
