Chia seeds were highly valued by the Mayans, Incas and Aztecs as a valuable source of nutrients. The oil contained in the seeds is especially rich in omega-3 (19%) and omega-6 fatty acids (6%).
Use:
The gluten-free chia seeds swell with water to create a gel-like mass. They are therefore often used as an additive in cereals, smoothies, bread and baked goods.
According to the EU Regulation EC 258/97 you should not consume more than 15g chia seeds a day.
