Real Conservera Española - Sea Urchin Roe

The sea urchin roe is manually extracted from the sea urchin and then washed in sea water before being packed -- this naturally preserves the flavor. This process is always done by hand and must be completed in the proper season between January and March. Each tin is filled with a portioned amount of this delicious roe.

Fishing sea urchin is no easy endeavor. Skilled fisherman in Galicia venture around the rocky shores of the region in search for this fruit of the sea. It requires a great deal of skill and can be quite dangerous.
